Home Lab NUC 13 - Which drive for Proxmox install?

I’m a total noobie to Proxmox and ZFS. I installed it and ran a couple of VMS on an old PC and have decided to move to an Intel NUC 13. The NUC has a 1TB PCIe 3 NVME, a 1 TB PCIe 4 NVME and a 2TB SATA SSD. It has 64GB or RAM and an i7-1360 with 12 cores and 16 threads.

This is just a home lab. I want to run pfSense, a couple Linux bistros and a W11 VM and learn Promox.

Should I RAID the 2 NVME drives for Proxmox or will one be fast enough ?

Or should I put Proxmox on the SATA SSD and using the NVMEs for the VMs ?

Any and all advice is appreciated !

Were it me, I’d probably create a mirrored vdev from the two nvme drives during the Proxmox installation and add the ssd later for backups, unless you have another use for it.
